  • 32 ounces frozen California blend vegetables
  • 2 teaspoons minced garlic 
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 medium lemon zest and juice
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Place 32 ounces frozen California blend vegetables in a large bowl or resealable plastic bag. Add 2 teaspoons minced garlic, 2 tablespoons olive oil, 1/2 teaspoon salt, and 1/2 teaspoon black pepper. Toss until the vegetables are evenly coated.
  3. Spread the coated vegetables in a single layer on the prepared baking sheet.
  4. Bake for 10–12 minutes, or until the florets start to brown slightly and the carrots are tender-crisp.
  5. While the vegetables are baking zest 1 medium lemon and juice it.
  6. Remove the baking sheet from the oven. Drizzle the vegetables with the lemon juice and sprinkle the lemon zest and 1/2 cup grated Parmesan cheese on top. Serve immediately while hot.

Notes

  • Air Frying: Preheat your air fryer to 400 degrees Fahrenheit. Toss your veggies in a bit of oil and your chosen seasonings. Arrange in a single layer in the fryer basket, then cook for 10-12 minutes until crispy, shaking the basket halfway through.

  • Spicy Kick: Add up to 1/2 teaspoon of red pepper flakes with the seasonings before roasting.
  • Herb Lovers: Add 1 teaspoon of dried herbs like rosemary, thyme, or Italian seasoning to the seasonings before roasting.
