  • 2 cans cream of mushroom soup
  • 1/2 cup milk
  • 6 skinless boneless chicken breasts thighs also work well
  • salt to taste
  • ground black pepper to taste
  • 6 slices deli ham
  • 6 slices Monterey Jack cheese

Dijon Cream Sauce Ingredients (Optional)

  • 1 1/2 tablespoons butter
  • 1 1/2 tablespoons all-purpose flour
  • 1 1/4 cups milk
  • 2 tablespoons Dijon mustard
  • 3 tablespoons finely grated Parmesan cheese

Instructions

Casserole Directions

  1. Preheat oven to 350 degrees.
  2. Spray a 9 X 13-inch casserole dish with non-stick spray.
  3. Combine soup and milk in the dish.
  4. Place the chicken into the dish.
  5. Sprinkle salt and pepper on the chicken breasts.
  6. Put a slice of ham on top of each chicken breast.
  7. Top with cheese slices.
  8. Bake uncovered at 350 degrees for 40 to 45 minutes.

Dijon Cream Sauce Directions (Optional)

  1. Melt the butter in a small saucepan over medium heat.
  2. Add half of the milk and whisk until well blended.
  3. Add the remaining milk, Dijon mustard, and Parmesan cheese.
  4. Cook for about 3 minutes, whisking constantly, until the mixture starts to thicken.
  5. Remove the sauce from the heat.
  6. Season with salt and pepper to taste.

Notes

  • For maximum flavor, consider splitting raw chicken breasts horizontally and stuffing additional ham and cheese inside before assembling the casserole. This creates pockets of melty goodness throughout the dish while maintaining the ease of preparation.
