Easy Garlic Alfredo Tortellini
Description
The tortellini is boiled according to package directions and drained. Separately, butter is melted and garlic and red pepper flakes sautéed briefly to release fragrance. Flour is whisked in to form a roux, which is then gradually combined with milk and half and half, cooking until slightly thickened. Cream cheese and Parmesan are stirred in until smooth and melted. The tortellini is gently folded into the sauce and served immediately garnished with fresh parsley.
This dish offers a rich, creamy texture with a mild garlicky kick from the sautéed garlic and a touch of heat from the red pepper flakes. The cheeses provide depth and silkiness to the sauce, complementing the tender pasta.
Half and half can be substituted by mixing whole milk and heavy cream in equal parts or similar ratios to approximate the original. The recipe is straightforward and well-suited for a comforting meal.
Ingredients
- 1 three cheese tortellini refrigerated, 9-ounce package
- 2 tablespoons butter unsalted
- 3 cloves garlic minced
- ¼ teaspoon red pepper flakes crushed
- 2 tablespoons all-purpose flour
- 1 cup milk or more, as needed
- ½ cup half and half
- 2 ounces cream cheese cubed
- ¼ cup Parmesan Cheese freshly grated
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 2 tablespoons parsley chopped fresh leaves
Instructions
- In a large pot of boiling salted water, cook tortellini according to package instructions; drain well.
- Melt butter in a saucepan over medium heat. Add garlic and red pepper flakes, and cook, stirring frequently, until fragrant, about 1 minute. Whisk in flour until lightly browned, about 1 minute.
- Gradually whisk in milk and half and half, and cook, whisking constantly, until slightly thickened, about 2-3 minutes.
- Stir in cheeses until melted, about 1-2 minutes. If the mixture is too thick, add more milk as needed; season with salt and pepper, to taste. Stir in tortellini and gently toss to combine.
- Serve immediately, garnished with parsley, if desired.
Notes
- Half and half can be made by combining equal parts whole milk and heavy cream or adjusted with low-fat milk and cream.
- Cook tortellini according to package instructions before tossing in sauce.
- Adjust sauce thickness by adding more milk if needed.
