Easy Greek Orzo Pasta Salad

This fresh delicious orzo pasta salad is packed with salty feta, fresh veggies, and bright lemon dressing.

Ingredients
- 1 ½ cups orzo pasta salad
- ¼ tsp lemon zest
- 4 tbsp lemon juice
- ½ cup olive oil
- 3 tsp garlic pressed or minced
- 1 tsp oregano
- 1 tsp sea salt
- ¼ tsp fresh ground black pepper
- 1 tsp sugar
- 2 cups cherry tomatoes halved
- 2 cups cucumber medium diced
- ½ cup sun dried tomatoes drained and chopped
- ½ cup feta cheese crumbled
- ¼ cup olives halved, black or pitted kalamata
- 2 tbsp fresh basil minced
- 2 tbsp fresh dill minced
- Optional 2 tsp capers, minced
Instructions
- Bring a pot of salted water to a boil then cook orzo for 10 minutes.
- While orzo is cooking, in a medium bowl make the dressing by combining lemon zest, lemon juice, olive oil, minced garlic, oregano, sea salt, and sugar. Whisk to bring together.
- When ready, drain the orzo and place it - hot - into a large bowl. Pour the dressing over the pasta and stir well.
- As the pasta cools stir it periodically so it soaks up the dressing well.
- Once pasta has cooled add all the remaining ingredients to the bowl and stir to combine. Taste once combined then adjust with more salt and pepper to taste. Enjoy!
