Ingredients
- 1 lb ground beef
- 4 medium potatoes peeled and thinly sliced
- 1 onion chopped
- 1 can 10.5 oz cream of mushroom soup
- 1 cup shredded cheddar cheese
- ½ cup milk
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- salt and pepper to taste
- 1 tablespoon olive oil for cooking the beef
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a skillet over medium heat. Add ground beef and chopped onion. Cook, stirring frequently, until the beef is browned and the onions are soft. Drain any excess fat.
- Stir in garlic powder, paprika, salt, and pepper to the beef mixture.
- In a separate bowl, mix the cream of mushroom soup with milk to create a smooth sauce.
- In a greased 9x13-inch baking dish, layer the sliced potatoes, followed by half of the beef mixture. Repeat with another layer of potatoes and the remaining beef mixture.
- Pour the soup mixture evenly over the layers. Cover with aluminum foil.
- Bake in the preheated oven for 35 minutes.
- Remove the foil, sprinkle the shredded cheddar cheese on top, and bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
- Let the casserole sit for 5 minutes before serving.
Notes
- You can use any type of cheese you prefer, such as mozzarella or colby jack, for a different flavor.
- Add some vegetables like peas, carrots, or corn for extra nutrition and flavor.
- To make it more indulgent, top with crispy bacon bits before serving.
- This casserole can be made ahead of time and stored in the fridge for up to 2 days before baking.
- For a lighter version, use ground turkey or chicken instead of ground beef.
- Leftovers can be stored in the fridge for up to 3 days and reheated in the microwave or oven.
