Ingredients
- ½ cup light brown sugar packed
- ½ cup granulated sugar
- 1 cup all-purpose flour
- ½ teaspoon salt
- 3 teaspoons baking powder
- 1 teaspoon ground ginger
- ½ cup salted butter melted and slightly cooled
- ¼ cup reserved pineapple juice
- 1 tablespoon honey
- 1 teaspoon vanilla extract
- ½ cup whole milk
- 20 ounces canned pineapple tidbits (reserve ¼ cup juice)
Instructions
- Preheat the oven to 375 degrees F.
- Prepare a 9 x13-inch pan with either butter or cooking spray and set it aside.
- In a large mixing bowl add the sugars, flour, salt, baking powder, and ginger. Mix well.
- Add in the melted butter, pineapple juice, honey, vanilla extract, and milk. Stir until well combined.
- Pour the dough into the prepared pan.
- Add the drained pineapple tidbits on top spreading them as evenly as possible. Slightly press the tidbits into the dough.
- Bake in the preheated oven for 25 to 30 minutes or until the edges are set and golden brown in color.
Notes
- To test for doneness, insert a wooden toothpick into the cobbler halfway between the edge and the center. It should come out clean if it's done.
- Serve with a scoop of vanilla ice cream (or butter pecan!) or with a dollop of sweetened whipped cream and a drizzle of caramel sauce.
- Place any leftovers in an airtight container in the fridge for up to 3 days. Rewarm individual servings in the microwave for about 30 seconds. Portions may also be reheated in an air fryer at 330 degrees for 3-4 minutes.
