Ingredients

Servings
  • ½ cup light brown sugar packed
  • ½ cup granulated sugar
  • 1 cup all-purpose flour
  • ½ teaspoon salt
  • 3 teaspoons baking powder
  • 1 teaspoon ground ginger
  • ½ cup salted butter melted and slightly cooled
  • ¼ cup reserved pineapple juice
  • 1 tablespoon honey
  • 1 teaspoon vanilla extract
  • ½ cup whole milk
  • 20 ounces canned pineapple tidbits (reserve ¼ cup juice)

Instructions

  1. Preheat the oven to 375 degrees F.
  2. Prepare a 9 x13-inch pan with either butter or cooking spray and set it aside.
  3. In a large mixing bowl add the sugars, flour, salt, baking powder, and ginger. Mix well.
  4. Add in the melted butter, pineapple juice, honey, vanilla extract, and milk. Stir until well combined.
  5. Pour the dough into the prepared pan.
  6. Add the drained pineapple tidbits on top spreading them as evenly as possible. Slightly press the tidbits into the dough.
  7. Bake in the preheated oven for 25 to 30 minutes or until the edges are set and golden brown in color.

Notes

  • To test for doneness, insert a wooden toothpick into the cobbler halfway between the edge and the center. It should come out clean if it's done.
  • Serve with a scoop of vanilla ice cream (or butter pecan!) or with a dollop of sweetened whipped cream and a drizzle of caramel sauce.
  • Place any leftovers in an airtight container in the fridge for up to 3 days. Rewarm individual servings in the microwave for about 30 seconds. Portions may also be reheated in an air fryer at 330 degrees for 3-4 minutes.
