Instructions

  1. Prepare a small square pan (8 x 8 or 9 x 9) pan by lining it with parchment paper (or aluminum foil) and coating the parchment or foil with cooking spray.
  2. In a medium microwave-safe bowl combine semisweet Chocolate Chips and 6 tablespoons (about half the can) Sweetened Condensed Milk, and microwave in 30-second bursts, stirring really well each time, until melted. It should take about 1 minute, tops. *Chocolate continues melting as you stir, so stir for at least 30 seconds between heatings.
  3. Place the dark chocolate mixture into the 8x8 or 9x9 pan and smooth with a spoon or offset spatula—place in the fridge for 15 minutes to set.
  4. Just as the 15 minutes are ending, begin melting your white chocolate chips. Add the rest of the can of sweetened condensed milk, to the white chocolate chips and microwave in 30-second bursts, stirring well each time, until melted. It should take about 1 minute, tops.
  5. *Be sure to stir well between heating in the microwave; chocolate continues to melt while stirring! If you heat too long your chocolate will seize up on you!
  6. When dark chocolate is set a little, add dollops of the white chocolate mixture (warm first if necessary), and carefully spread it over the dark chocolate base.
  7. Sprinkle the tiny marshmallow bits over the top of the white chocolate layer and gently press into the fudge.
  8. Place the fudge in the refrigerator and set for 3 hours or overnight. When set, cut into 1 x 1-inch squares and serve them at room temperature. Enjoy!

Notes

  • Fudge is much easier to cut when it’s chilled, chill at least 3 hours or overnight. For best results, dip a large, sharp knife in boiling water, dry it completely, and cut one long slice (the heat will help the knife to glide through), repeat the process with each slice; repeat for the opposite direction. Don’t forget to wipe the knife clean each time or you will have wet edges.
  • Storage Tips
  • Countertop - Because there’s no heavy cream or unsalted butter, like with traditional fudge, you can leave the creamy hot chocolate fudge bites on the counter at room temperature in an airtight container for about a week. Use parchment or wax paper between layers to prevent sticking, if necessary.
  • parchment
  • Refrigerate - To keep leftovers longer, store them in an airtight container in the refrigerator for about three weeks.
  • How to Freeze - Freeze hot chocolate fudge by placing the bites in an airtight container for up to three months to enjoy them all holiday season! Then, enjoy straight from the freezer, or let them thaw in the fridge overnight to serve the following day.
  • Gluten-Free Microwave Fudge
  • Make sure that your chocolate chips are gluten-free, the Jet-Puffed Marshmallow bits are gluten-free if you use another brand, double-check.
  • Dairy-Free Fudge Recipe
  • If you want to make this microwave fudge recipe dairy-free or vegan, purchase or make a dairy-free sweetened condensed milk and purchase dairy-free chocolate chips.
