A perfect side dish for weeknight dinners or holiday celebrations, Instant Pot Acorn Squash is full of fiber and Vitamin C for a healthy dish.

Ingredients
- 1 acorn squash
- 1 cup water
Instructions
Prepare The Squash
- Wash acron squash and remore any debri from the skin.
Cut The Squash
- With a sharp knife cut about 1/2" into the stem side of the squash removing the stem.
- Place the cut side down and slice the squash in half.
- Scoop out the seeds from the middle of the squash (save for roasting).
- Leave the squash halved or slice each half into wedges.
Pressure Cook the Squash
- Place the metal trivet in the innner pot of the pressure cooker and add 1 cup of water.
- Put the squash on the trivet with the skin side down. Cover with the lid and ensure the vent is locked.
- Press the MANUEL mode on the pressure cooker and add 4 minutes.
- Let the pressure naturally release for 5 minutes before removing the lid.
Season Acorn Squash
- Add salt & pepper, butter or any herbs of your choice. See the notes to add brown butter.
Notes
- Notes: for frozen acorn squash set the timer for 4-6 minutes.
- Roast Acorn Squash in the Oven - to roast in the oven follow the prepare and cut steps above. Then place the cut squash on a parchment-lined baking sheet. Roast at 400°F for 30-40 minutes or until the flesh is tender.
- Brown Butter Drizzle - Place a stick of sliced unsalted butter in a small skillet over medium heat. Stir until the butter liquifies and begins to turn amber in color and brown bits form on the bottom of the pan. Remove from heat and pour over prepared squash. Sprinkle with salt for taste.
