Easy Lasagna Casserole

  • 8 ounces lasagna noodles broken into 2-inch pieces, uncooked
  • 1 pound ground beef
  • 1 jar marinara sauce 24 ounces
  • ½ cup ricotta cheese 124 g
  • 2 cups mozzarella cheese shredded, divided
  • ½ cup Parmesan Cheese grated
  • 1 teaspoon Italian seasoning
  • ½ teaspoon garlic powder
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • basil chopped for garnish, fresh

Instructions

  1. Preheat oven to 375°F (190°C). Spray an 11x7-inch baking dish with nonstick cooking spray. Set aside.
  2. Bring a medium pot of water to a boil. Add the lasagna noodles and cook until al dente (about 8-10 minutes). Drain and set aside.
  3. While the noodles cook, in a medium non-stick skillet, cook the ground beef over medium heat until browned (8-10 minutes), breaking it apart as it cooks. Drain any excess grease.
  4. To a large bowl, add the cooked noodles, cooked beef, marinara sauce, ricotta cheese, 1 cup mozzarella, parmesan cheese, Italian seasoning, garlic powder, salt, and pepper. Stir to combine.
  5. Spread the mixture into the prepared baking dish. Sprinkle the remaining mozzarella evenly over the top.
  6. Cover with aluminum foil and bake for 20 minutes. Then, remove the foil and continue baking for an additional 10 minutes, or until the cheese on top is golden and bubbly.
  7. Let the casserole rest for 5-10 minutes before serving. Garnish with fresh basil and serve.
