  • ¾ cup sugar
  • 1 cup yogurt
  • ½ cup olive oil
  • 1 cup pumpkin puree
  • cup all purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ½ tsp cardamom
  • ½ cup walnuts chopped

Instructions

  1. Preheat the oven to 350°F and line a 9-inch cake pan with parchment paper.
  2. in a large bowl whisk the eggs and sugar together. Then, add yogurt, olive oil, and pumpkin puree.
  3. Add in the flour, baking powder, salt, cinnamon, and cardamom followed by chopped walnuts.
  4. Mix using a whisk or spatula until just combined. Make sure not to overmix.
  5. Transfer the batter to the prepared pan.
  6. Bake for 45 minutes to 1 hour, until a toothpick inserted in the center comes out clean.
  7. Let the cake cool completely before serving.

  • Pumpkin Puree vs. Pumpkin Pie Filling: Make sure to use pure pumpkin puree, not pumpkin pie filling, which has added sugar and spices that could affect the flavor and consistency of the cake.
