  • 1 tbsp bell peppers chopped
  • 1 tbsp parsley chopped, fresh
  • spinach baby, a couple leaves
  • feta cheese optional, a sprinkle

Instructions

  1. Prepare a large microwave safe mug or bowl and brush it generously with olive oil (or oil of your choice). (It's okay if there is a little olive oil in the bottom of the mug, it will make the eggs more moist and delicious)
  2. Crack the eggs and add them to the mug. Season with kosher salt, black pepper and Aleppo or other seasonings if using. Beat the eggs with a fork or small whisk.
  3. Add the bell peppers, parsley, spinach, and feta. Mix again with your fork to make sure everything is well combined.
  4. Microwave on high for up to 1 minutes and 30 seconds, stirring occasionally. It's a good idea to check on your eggs every few seconds (I cooked mine for 20 to 30 seconds at a time, it took about 1 minute and 20 seconds in total). Let stand in the closed microwave briefly before you serve.

  • Use two eggs for this recipe; reduce cooking time if using fewer eggs or only egg whites.
  • Chop any vegetables finely to ensure they cook well during microwaving.
  • Microwave power varies; it’s best to cook in short intervals and stir frequently to avoid overcooking.
