Easy no yeast Air Fryer flatbread pitas

A recipe to make easy no yeast Air Fryer Greek flatbread pitas. Perfect for gyros and to eat with mezze and dips.

Ingredients
- 2 ½ cups flour
- 1 tsp salt
- 1 tsp baking powder
- ½ cup water
- ¾ cup full fat or low fat plain or Greek yoghurt
- 1 Tbsp olive oil
Instructions
- Mix the flour, salt and baking powder in a bowl and whisk to combine.
- Add the water, yoghurt and olive oil and mix until it comes together in a scraggy dough.
- Tip this out onto a floured surface and knead for around 8 minutes until the dough is smother, soft and springy to the touch.
- Cut the dough into 8 pieces and roll each piece into a ball. Place the balls. Onto a floured tray and cover with a towel. All to rest for 20 - 30 minutes.
- When you are ready to make the pita, preheat You Instant Vortex Air fryer to 200c/400F.
- Dust a surface with flour and roll out the pita to large even discs around 20 – 25cm in diameter.
- Place each piece of rolled dough into the preheated Air Fryer basket and cook until puffed up and starting to take on colour. This will take about 3 – 4 minutes.
- Once they have puffed up, remove with tongs, and add the next one.
- Keep the flatbread, pitas warm by placing them in a thick tea towel.
Notes
- Serve with tzatziki, red onion and tomato salad, other leaves and grilled chicken or meat. Or any other filling you like.
