Easy One Pot Lasagna
Description
This Easy One Pot Lasagna recipe uses Italian sausage browned in olive oil as the flavor foundation. Diced tomatoes and tomato sauce are added along with Italian herbs and optional red pepper flakes to build a robust, fragrant tomato sauce. Farfalle pasta cooks directly in this sauce with some added water, absorbing flavors while becoming tender.
When the pasta is cooked, mozzarella and Parmesan cheeses are stirred in to add creamy richness. Dollops of ricotta cheese are layered on top, gently heated until warmed through. This creates a layered, cheesy texture similar to traditional lasagna, but simplified into one pot.
The dish is served immediately, optionally garnished with fresh parsley to add color and a fresh note. It functions well as a substantial meal on its own.

- Bring to a simmer and stir in pasta and 2 cups water. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 13-15 minutes.
- Remove from heat. Stir in mozzarella and Parmesan until well combined. Using a small cookie scoop, top with dollops of ricotta and cover until heated through, about 2-4 minutes.
- Serve immediately, garnished with parsley, if desired.
