Description

The Easy Pandan Milk recipe features a simple blend of cream and freshly stirred pandan juice, sweetened with pandan simple syrup to taste. The pandan juice provides a natural green color and fragrant aroma, while the cream gives a rich, smooth mouthfeel. For extra texture and to make the drink more substantial, pandan jelly can be added, which also intensifies the green color. This jelly is typically made ahead using pandan syrup and coconut agar jelly and allowed time to set. The resulting drink balances creamy richness with the floral, grassy notes of pandan, offering a unique and refreshing flavor experience.

Ingredients

  • ½ Cup cream Substitute: soy milk or a vegan milk of choice.
  • ½ Cup pandan juice Stir before using to make sure the flavor hasn't all settled at the bottom.
  • ½ Tablespoon pandan simple syrup or to taste. Substitute: white sugar, gula melaka, homemade brown sugar, honey or 1 of these refined sugar substitutes etc.
  • pandan jelly Optional, to make the drink more substantial (Pandan Jelly will also make the drink greener and more attractive.) See Notes on how to make, or grass jelly

Instructions

  1. Pour the stirred pandan juice into the cream.
  2. Sweeten to taste and serve. (If adding jelly, add the jelly first then sweeten to taste, as the jelly is already sweet.)

Notes

  • Pandan jelly can be prepared in advance by combining pandan syrup or extract with sugar and coconut agar jelly, then allowing it to set.
  • Konnyaku jelly is chewier but not recommended in drinks due to choking hazards as it doesn’t dissolve in the mouth.
  • Extra pandan jelly can be saved and served as a standalone dessert or incorporated into fruit salads; it stores well in the fridge for up to five days.
