Ingredients
- 6 ounces white rum or omit for virgin pina coladas
- 6 ounces pineapple juice
- 6 ounces cream of coconut Coco Lopez brand
- ½ cup pineapple preferably from a fresh pineapple that you freeze the chunks, but store bought frozen from a bag is fine, frozen
- 4 cups ice
- maraschino cherries optional for garnishing
- pineapple optional for garnishing, wedges
Instructions
- To the canister of a high speed blender** (See Notes for shaken rather than frozen/blender instructions), add all ingredients (except optional garnishes), and blend on high speed until smooth and creamy, about 1 minute.
- Divide between approximately 4 glasses, optionally garnish with cherries and/or pineapple wedges***, and serve immediately. Pina coladas are best served fresh.
Notes
- Use canned cream of coconut (such as Coco Lopez) for the correct sweet and syrupy consistency; do not substitute coconut cream or milk.
- The recipe can be made virgin by omitting the rum and adjusting pineapple juice accordingly.
- For a shaken cocktail version, mix 1.5 to 2 ounces each of rum and pineapple juice with 1 ounce cream of coconut, shaken with ice and served over ice cubes.
- Add an optional rum floater after blending for a stronger cocktail.
