Instructions
- Rinse the pineapple under cool running water to remove any dirt or debris from the skin.
- Using a sharp chef's knife, cut off the top and bottom of the pineapple to create a flat base for stability. Stand the pineapple upright on the flat base and slice down the sides, removing the tough outer skin and the "eyes" (small brown spots).
- Continue rotating the pineapple and cutting until all the skin and eyes are removed. Cut the pineapple lengthwise into quarters. Then, cut out the tough core from each quarter.
- Dice the pineapple quarters into smaller chunks to fit into your blender easily. Place the pineapple chunks in a blender. Add water, sugar, and lemon juice to the blender. Start blending the pineapple on low speed and gradually increase the speed until the juice is smooth and no large chunks remain.
- Pour the pineapple juice into a large pitcher. Taste the juice and adjust the sweetness with more sugar if you'd like it sweeter. Serve the fresh pineapple juice in glasses filled with ice.
