- 15 dry tamarinds , peeled
- 8 cups of water or more * (If you prefer it more diluted add more water)
- ¾ to 1 cup sugar , to taste
- ice , to serve

Instructions
- Peel the tamarind pods. Remove as much of the hard shell and strings as possible. Use a scissor to make it easier to cut the tamarinds and remove the seeds before placing them in the water.*(This way you avoid having to look for the seeds in the water) Don't worry if you can’t get all of the shells off the tamarind, the remaining bits will come off when you boil them.
- In a large pot add the peeled tamarind and 4 cups of water. Boil for 15 - 20 minutes or until very soft and begin to release the pulp. Turn off the heat and let it cool.
- Once cooled, using clean hands, squeeze the mushy pods to separate the flesh and any remaining seeds, or use a Stainless Steel Potato Masher. Place the liquid and remaining pulp in a blender and process until the pulp is fully blended into the water. Run the liquid through a strainer, if you wish, or leave it pulpy.
- Pour your Tamarind Water "Agua de Tamarindo" into a pitcher, add the remaining water and add sugar, to taste. Refrigerate until cold. Store in the refrigerator for up to 2 days Serve cold over ice! Enjoy!
