  • 1 ¼ cup flour
  • 2 teaspoon baking powder
  • 1 tablespoon pumpkin spice
  • 1 cup soy milk
  • 2 egg
  • 1 cup pumpkin puree fresh
  • 1 tablespoon olive oil
  • 1 tablespoon maple syrup optional

Instructions

  1. Turn on your waffle maker to make sure is hot when the batter is ready.
  2. Mix all the dry ingredients in a big mixing bowl: Flour, baking powder and spices. Whisk until they are all incorporated
  3. Add into the mixing bowl the wet ingredients, apart from the egg whites: Milk, egg yolks, pumpkin puree, maple syrup and oil. Whisk until all the ingredients are perfectly incorporated.
  4. Whisk using an electric hand whisker the egg whites until you have a cloudy consistency. You should be able to form soft peaks. Once it's done, pour the mixture into the batter and gently mix with the rest of the ingredients without overmixing it.
  5. Add enough batter in the waffle maker and leave it covered while cooking. Do not open the lid if the waffle maker is steaming. When the steam starts reducing it's an indicator that your waffle should be done. Depending on the setting you have it will take more or less time. We normally have it set at 70% between light and dark. It takes around 5-7 minutes for each waffle to be completely cooked.
  6. Take the waffle our of your waffle maker, leave it to cool for 2-3 minutes, add your toppings and enjoy!
