- 1 large sweet potato (1-pound), cubed
- 2 tablespoons of olive oil, divided
- Pinch of salt and pepper

Instructions
- Place the cubed sweet potato in a food processor. Add 1 tablespoon of olive oil and a pinch of salt and pepper.
- Pulse for 15 seconds or until you achieve the texture of grains of rice. Do not over blend it, or it will become mushy.
- Place a large skillet over medium high heat and add the remaining 1 tablespoon of oil. Add the sweet potato and spread it on the pan in an even layer. Cook undisturbed for 1 minute. - Remove from heat and transfer into a bowl immediately or it will continue to cook in the hot pan.
- Optionally, garnish with fresh parsley and serve.
