Ingredients

Servings
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon baking soda
  • 2 teaspoons sugar
  • 1 teaspoon salt
  • 6 tablespoons butter cold and cubed, unsalted
  • 3/4 cup buttermilk plus more for brushing, cold
  • butter for the tops of the biscuits, optional, melted

Instructions

  1. Preheat oven to 450°F. Line a large baking sheet with parchment paper and set aside.
  2. Add flour, baking powder, baking soda, sugar, and salt in a large mixing bowl. Mix well.
  3. Add the COLD cubed butter into the mixture. Then use a pastry cutter or potato masher to cut the butter into the dry ingredients mixture until no large chunks of butter remain.
  4. Pour the COLD buttermilk into the mixture and fold everything together with a spatula. Mix until the dough begins to come together. The dough will be crumbly with some wet spots.
  5. Transfer the dough onto a lightly floured surface. Gather the dough into a ball and knead gently. Pat it into a rectangle and fold it in thirds.
  6. Turn the dough, and flatten it into a larger rectangular. Repeat this process 2 more times.
  7. Pat down the dough into a 1/2-inch thick rectangle. Cut out the dough using a floured biscuit cutter (2.5-inch). Continue to gather any scrap pieces of dough, patting it down to 1/2-inch thickness, and cutting it until you have 12-14 biscuits.
  8. Place the cut dough on the baking sheet slightly touching each other. Brush the top of each piece with a bit of buttermilk.
  9. Bake for about 15-17 minutes or until lightly golden brown.
  10. Remove from the oven and brush with melted butter if desired. Allow the cooked biscuits to cool for a few minutes, serve, and enjoy!
