Easy Turkey Pot Pie is a classic recipe that is made with your leftover turkey. This easy, delicious and hearty pot pie is made with simple ingredients.

Ingredients
- 1 pkg premade pie crust 2 crusts
- 2 cups cooked and shredded turkey leftover turkey works great
- 2 Tbsp butter
- 1 small onion diced finely
- 1 can cream of chicken soup 10.5 oz can
- 1 cup milk
- 1 bag frozen mixed vegetables 16 oz
- 1/2 tsp poultry seasoning
- 1/4 tsp dried thyme leaves
- 1/2 tsp salt
- 1/2 tsp pepper
- 1 large egg beaten

Instructions
- Preheat the oven to 425 degrees F and line a 9 inch pie pan with one of the premade pie crusts.
- Melt the butter in a large skillet over medium high heat. Add the chopped onion and sauté until the onions are cooked and translucent.
- Then stir in the cream of chicken soup and the milk until combined. Heat until the mixture is heated through.
- Then stir in the frozen mixed vegetables, the cooked shredded turkey and the seasonings. Heat for 3-5 minutes until the veggies are tender and the turkey is heated through.
- Then pour the turkey and vegetable mixture into the pie pan over the pie crust.
- Cover with the remaining pie crust sheet. Pinch the edges to seal and cut a few slits on the top of the pie. Brush the top of the pie with the egg wash (beaten egg).
- Bake for 35-40 minutes or until the pie is lightly browned.
- Remove the pie from the oven and let it sit for 10-15 minutes.
- Then it’s ready to slice, serve and enjoy!
Notes
- You can easily use cooked chicken instead of turkey in this recipe.
- If the pie crust is getting too brown in the oven, loosely cover the pie with foil to keep it from getting browner.
