  • 60 g (2 cups) 100% Whole Wheat flour, sifted
  • 1 tablespoon baking powder
  • teaspoons baking soda
  • ¼ teaspoon kosher salt
  • 1 tablespoon honey
  • 2 eggs , room temperature
  • cup sour cream , light cream, or whole milk, room temperature
  • 1 avocado , ripe
  • 6 tablespoons granulated sugar , leveled off
  • 6 tablespoons light brown sugar , packed and leveled off
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon pure vanilla extract

Instructions

  1. Preheat the oven to 350F. Line a 9"x 5" Bread Pan with parchment paper or butter and flour and set aside.
  2. In a large bowl, whisk together the whole wheat flour, baking soda, and baking powder.
  3. In a stand mixer bowl fitted with the paddle or whisk attachment, add the avocado flesh, honey, lemon juice, and sugars, and salt, and blend until completely smooth. Beat in eggs one at a time until incorporated, add the vanilla and sour cream and beat until combined.
  4. Now, gradually pour the wet mixture into the dry ingredients whisking until just combined.
  5. Pour into the prepared bread pan and bake the Whole Wheat Avocado bread for 40 minutes, turning the pan halfway through baking. Let cool Whole wheat avocado bread for 15 minutes before slicing. Enjoy!!!
