Easy Whole30 Tuna Salad Lunch Bowl

My favorite go-to lunch, this easy Whole30 tuna salad lunch bowl is a creamy and spicy tuna salad served on a bed of perfectly paired veggies, plus it’s filling, healthy and so tasty.

Ingredients

  • 1 can tuna
  • 1 ½ - 2 tablespoon mayonnaise see notes
  • 1 jalapeno pepper diced, pickled
  • 1 teaspoon jalapeno juice pickled
  • 1 teaspoon olive oil
  • 1 cup spinach or mixed greens
  • ¼ cup grape tomato or cherry tomato
  • ¼ cup carrot baby
  • ½ liced avocado
  • ½ cup quinoa cooked, optional, see notes

Instructions

  1. Use a fork to mix the tuna with 1 ½ to 2 tablespoons of mayo (depending on how creamy you want it). 
  2. Add the diced pickled jalapeño, pickled juice, and olive oil (leave out the olive oil if you’re tuna already has some).
  3. Mix everything together and set aside.
  4. In a medium to large bowl, place the spinach or mixed greens on the bottom.
  5. Arrange the tomatoes, carrots and avocado in the bowl.
  6. Lastly, add the prepared tuna salad.
  7. Season with salt and pepper.

Notes

  • *For a Whole30 compliant tuna salad, be sure to use compliant tuna, mayo, and pickled jalapeños.
  • *If not on Whole30, add some cooked quinoa to the bowl for added nutrients and protein. If you do use quinoa, you can split the tuna into two portions.
