Ingredients
- 3 cups flour
- ¼ teaspoon salt
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- 2 teaspoons cinnamon
- 1/2 tsp ground nutmeg
- 2 eggs
- 3/4 cup unsalted butter (melted)
- ½ cup granulated sugar
- ½ cup brown sugar
- 1½ teaspoons vanilla
- 2 cups grated zucchini
Instructions
- Preheat oven to 325 F (165 C). Generously grease loaf pan.
- Combine dry ingredients (flour through cinnamon). Set aside.
- In a large bowl, beat eggs, butter, sugars, and vanilla.
- Slowly add flour mixture to the large bowl, beating as you go.
- Add zucchini and beat again until thoroughly mixed.
- Pour the batter into your greased loaf pan. Bake at 325 F for 60-65 minutes until a toothpick inserted into the middle of the bread comes out clean.
- Let cool on a wire rack for 10 minutes, then slice and enjoy!
