Fajita Burgers on Griddle

Ingredients
- 1 large sweet onion
- 1/2 red pepper
- 1/2 yellow pepper
- 1 avocado
- 1 Tablespoon lime juice or salsa verde
- 1 pound ground beef 80/20
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 teaspoon cumin
- 1 teaspoon oregano
- 2 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt optional
- 4 Buns
- 1 Tablespoon oil for griddle
Instructions
- Set the griddle to preheat on medium high heat.
- Thinly slice the peppers and onion into long strips.
- Mash the avocado up with a fork and mix it with either the salsa verde or lime juice.
- Put the ground beef in a bowl and add all spices - chili powder, paprika, cumin, oregano, garlic powder, onion powder and salt if using. Knead the spices into the beef. Separate the mixture into fourths and press it down into patties.
- Take the veggies, burgers, avocado mixture, buns and oil out to the griddle. If your griddle has multiple temperature zones then put one on medium low for the veggies and one on medium high for the burgers. If you only have one zone set it to medium.
- Squirt some oil on the griddle and spread it around. Then add the peppers and onions in the oil. Let them cook for about 4 minutes before you start the burgers. Toss them occasionally as they cook.
- After 4 minutes add the burgers to the griddle. For medium burgers cook the 3 minutes per side. If you prefer well done burgers cook them for 5 minutes per side.
- When the burgers are almost done put the buns, cut side down, on the griddle to quickly toast them. Let them toast for about 1 minute.
- To make the burger spread some avocado mixture on the bottom of them bun. Then add a burger patty with the fajita veggies on top.
Notes
- Make these with ground turkey or ground chicken for a lower fat burger that still has lots of flavor.
- Use 1 1/2 Tablespoons of premade fajita spices to flavor the meat if you prefer.
