This family-size ciabatta sandwich filled with salami, mozzarella and marinated eggplant is the perfect summer lunch recipe.

Ingredients
- 1 Ciabatta bread
- 200 g (7oz) salami
- 200 g (7oz) mozzarella sliced
- 2 cups marinated eggplant
- 100 g (3oz) roasted peppers
- 3 cups rocket/arugula
- ½ cup fresh basil
Instructions
- Slice the bread in half with a sharp bread knife. Remove some of the bread from the top half (to make space for all the filling).
- Drizzle with a little olive oil then toast in a hot pan/grill pan until golden brown.
- Drizzle some of the marinated eggplant marinade onto the bottom piece of bread.
- Top with salami, sliced mozzarella cheese, marinated eggplant, roasted red peppers, rocket/arugula and basil.
- Drizzle more of the marinade over the greens then add the top piece of bread. Slice into portions and serve.
