This fig chicken is a tasty dish with sweet fig jam and tender chicken. Easy to make and perfect for a weeknight meal. Enjoy the juicy chicken and the burst of fruity flavor from the jam!

Ingredients
- 6 chicken thighs
- ½ cup fig jam no added sugar
- 1 tbsp olive oil
- ¼ cup balsamic vinegar
- ½ cup chicken broth or water
- 2 cloves garlic minced
- 1 tsp Dijon mustard
- salt and pepper to taste
Instructions
- First, pat the chicken thighs dry with a paper towel, then season them generously with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken thighs skin-side down. Sear for 5 to 7 minutes until the skin is golden and crispy. Flip the chicken and cook for another 3 to 4 minutes on the other side.
- In a small bowl, combine the fig jam, balsamic vinegar, chicken broth, and minced garlic.
- Spoon this mixture over the top of the chicken thighs.
- Reduce the heat to low, cover the skillet, and let the chicken simmer in the fig sauce for about 20 to 25 minutes, or until the chicken is cooked through (internal temperature should reach 165°F/75°C).
- Once cooked, remove the chicken from the skillet. If the sauce is too thin, let it simmer uncovered for an additional 5 minutes to thicken. Finally, serve the chicken thighs topped with the fig sauce.
Notes
- This recipe works well with chicken thighs and chicken breasts. We prefer thighs due to the juicy texture.
- Look for fig jam without any added sugar. We like this brand.
- Chicken is considered safe to eat at 165 degrees Fahrenheit.
- Use a meat thermometer if needed.
- Store leftovers in the fridge for up to 4 days.
