Filipino Coconut Macaroons
Description
This recipe for Filipino Coconut Macaroons features a batter of creamed butter and sugar combined with eggs and sweetened condensed milk for moisture and sweetness. Vanilla extract adds aroma, while a mix of flour and desiccated coconut provides structure and texture. The batter is scooped into mini muffin pans lined with paper cups, ensuring uniform size for even baking.
Baked at 350°F, the macaroons develop a golden crust while remaining tender inside. Cooling them before removing from the paper cups helps prevent sticking and retains their shape. Their texture balances chewiness from the coconut and softness from the condensed milk mixture.
These macaroons can be served as a snack or dessert. Their compact size makes them convenient for serving at gatherings or for packing as treats.
