  • cup butter softened
  • ¾ cup sugar
  • 2 egg
  • 1 can sweetened condensed milk 14 ounces
  • ½ teaspoon vanilla extract
  • ½ cup flour
  • 2 cups desiccated coconut

Instructions

  1. Preheat oven to 350 F.
  2. Line mini muffin pans with paper cups. Set aside.
  3. In a bowl, cream butter using a hand mixer on low speed.
  4. Add sugar and beat together until well blended and fluffy. 
  5. Add eggs one at a time, beating well after each addition.
  6. Add condensed milk and vanilla extract and continue to beat until blended.
  7. In a medium bowl, combine flour and desiccated coconut. Add to the egg mixture and beat until combined.
  8. Scoop into the prepared muffin pans and bake in the preheated oven for about 15 to 20 minutes or until golden and a toothpick inserted in the center comes out clean.
  9. Remove from baking pan and let cool on a wire rack for about 5 minutes.
