  • ¼ cup extra virgin olive oil 53 g
  • 3 teaspoons garlic minced
  • 2 cans crushed tomatoes 28 ounces each
  • 1 teaspoon kosher salt
  • 1 cup heavy cream
  • ½ cup ricotta cheese 123 g
  • ½ cup fontina cheese shredded, 108 g
  • ½ cup mozzarella cheese shredded, 56.5 g
  • ¼ cup Asiago cheese grated, 20 g
  • ¼ cup Parmesan Cheese grated, 25 g
  • 1 tablespoon basil finely chopped, plus more for garnish, fresh
  • 1 tablespoon parsley finely chopped, fresh

Instructions

  1. In a large non-stick pan (at least 12-inches) over medium-high heat, heat olive oil. Once hot, add garlic and cook for 1 minute, or until slightly browned.
  2. Reduce heat to medium and add tomatoes (with liquid) and salt. Bring the sauce to a boil and reduce heat to low. Simmer for 15 minutes.
  3. Add heavy cream and cheeses and stir until melted. Fold in the basil and parsley and simmer for 5 more minutes. Salt and pepper to taste.
