Ingredients
- 2 Tablespoons granulated sugar
- ½ cup sliced strawberries
- 1 brick (8 oz) cream cheese softened
- ¼ cup powdered sugar
- 6 large eggs
- ¼ cup whole milk
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 6 slices sourdough bread
- 2 Tablespoons salted butter

Instructions
- In a small bowl, use a fork to mix the granulated sugar with the strawberry slices and set aside for about 15 minutes. (Note: This will macerate the strawberries, intensifying the flavor and softening their texture.)
- In a large bowl, with a hand or stand mixer, beat the cream cheese and powdered sugar together until smooth. Gently fold in the strawberries.
- In a separate large bowl, beat the eggs, milk, vanilla extract, and cinnamon.
- Melt ⅓ of the butter in a large, heavy bottom, skillet over medium high heat. While the butter is melting, lay a slice of bread on a flat surface and spread a generous amount of the cream cheese filling over it. Place a second slice of bread over it. Repeat until you have 3 “sandwiches.”
- Soak each sandwich in the egg mixture for about a minute making sure each side is fully coated in the mixture. Immediately transfer the sandwich to the skillet and cook for about 5 minutes, using a spatula to flip halfway through, or until each side is golden brown.
- Serve warm with your toppings of your choice.
Notes
- Be sure the cream cheese is fully softened to avoid any little bits of raw cream cheese in the filling.
- Blend eggs until incorporated so you don't end up with little bits of egg white or egg yolk on your French toast.
- Ideally, bread should be slightly stale for the best French toast, at least a day or two old. Fresh bread can fall apart in the egg mixture. If you only have fresh bread, allow your sliced bread sit out at room temperature overnight or put in oven on low heat to dry out somewhat but be careful not to toast.
- Make sure that your bread soaks up the egg mixture and is totally covered. If using denser bread you may need a longer soak time of 20 seconds.
- Give your strawberries a good 15 minutes to fully macerate for best results.
- Check your French toast after about two minutes in the skillet by gently lifting the corner with your spatula. If it's golden brown, it's ready to be flipped.
