Ingredients
- 1 cup ice
- 3 cups frozen peach slices (approximately a 16 oz package)
- 12 oz Prosecco or sparkling wine (about half of a 750 ml bottle)

- fresh mint

Instructions
Blend
- Get out a blender. Add ice, peach slices, and Prosecco.
- Blend until smooth.
Taste and adjust if needed
- Give the bellini a taste, and see if you'd like it to be a bit sweeter. If you would like more sweetness, add a little simple syrup, then blend again.
Serve
- Pour bellinis into glasses, garnish with a peach slice and sprig of mint if desired, and serve cold.
Notes
- Alcohol-Free Version:
- This recipe makes approximately 44 oz, which I've estimated would serve about 6 people. But of course, feel free to divide it up into as many servings as you'd like.
- In place of Prosecco, use an equal amount of sparkling juice, sparkling water, or a non-alcholic sparkling wine alternative.
