Fruit Pizza

Delicious, homemade fruit pizza with a sugar cookie crust, cream cheese frosting and piled with fruit!

Sugar Cookie Crust:

  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla
  • 1 large egg
  • ½ teaspoon kosher salt
  • 2 teaspoons baking powder
  • 2 ¾ cups all-purpose flour

Cream Cheese Topping:

  • 8 ounces cream cheese softened
  • ¼ cup unsalted butter softened
  • ½ teaspoon vanilla extract
  • 2 cups powdered sugar

Fruit:

  • ½ cup diced strawberries
  • ½ cup blueberries
  • ½ cup blackberries
  • ½ cup raspberries
  • ¼ cup chopped kiwi about 1-2
  • ½ can mandarin oranges 15 ounce can, drained (* see note)

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.
  2. In a large mixing bowl, cream butter and sugar with a hand mixer or stand mixer, until light and fluffy, about 2 minutes.
  3. Add vanilla and egg to creamed mixture and mix for another 30 seconds or so.
  4. Add salt, baking powder, and flour to creamed mixture, just until combined.
  5. Press the dough into a 12-inch pizza pan, in an even layer.
  6. Bake for 14-16 minutes in the preheated oven at 350 degrees Fahrenheit or until lightly browned.
  7. Cool the crust completely before moving on to the next step.
  8. To make the topping, beat cream cheese and butter with a hand mixer or stand mixer until smooth, about 2 minutes.
  9. Add powdered sugar and vanilla extract and beat until fully combined.
  10. Spread in an even layer over the cooled crust. Decorate with fruit. Refrigerate until ready to cut and serve.

Notes

  • Can I Make Fruit Pizza The Day Before?If you want to get a head start, you can make parts of this recipe a day in advance!
  • You can make and bake the crust and then cool it to room temperature. Cover it tightly with plastic wrap and store it in the refrigerator overnight.
  • You can also make the frosting a day ahead and store it in an airtight container in the refrigerator.
  • Wait to frost and decorate the pizza until the next day. This will ensure your pizza doesn’t get soggy.
  • How Do You Keep The Cookie Crust From Getting Soggy?Wait to add the frosting and fruit until you are ready to serve the fruit pizza. Also, be sure to pat the fruit dry and avoid using fruit that is really watery.
  • Can You Use Refrigerated Cookie Dough Instead Of Homemade?Yes, I’ve tested this recipe with premade dough and it works well. I use dough that is already portioned into 24 cookie dough balls – just press them into the pan to make one unified crust.
  • If you use the prepared dough, reduce the baking time to about 10 minutes. The crust won’t be as thick as the homemade one but it will work fine.
  • How Long Do Leftovers Keep?They will keep for a couple of days in the refrigerator but keep in mind the crust will soften and the fruit will make it soggy. So, the crust may fall apart on you but it will still taste good!
