Garlic Parmesan Roasted Potatoes
Description
Garlic Parmesan Roasted Potatoes use red potatoes cut in half and seasoned with olive oil, minced garlic, and a blend of dried herbs such as thyme, oregano, and basil. Parmesan cheese is added before roasting, forming a golden crust as the potatoes bake at 400 degrees Fahrenheit. This high heat roasting crisps edges and deepens flavor, while maintaining a soft center.
After 25 to 30 minutes, the potatoes are pulled from the oven and stirred with butter to add smooth richness. A garnish of chopped parsley adds a pop of color and fresh bite. These potatoes are best served immediately to enjoy their crisp exterior and tender interior texture.
Ingredients
- 3 pounds potato halved, red
- 2 tablespoons olive oil
- 5 cloves garlic minced
- 1 teaspoon thyme dried
- ½ teaspoon oregano dried
- ½ teaspoon basil dried
- ⅓ cup Parmesan Cheese freshly grated
- salt to taste, Kosher salt and freshly ground
- black pepper to taste, Kosher salt and freshly ground
- 2 tablespoons butter unsalted
- 2 tablespoons parsley chopped leaves
Instructions
- Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
- Place potatoes in a single layer onto the prepared baking sheet. Add olive oil, garlic, thyme, oregano, basil and Parmesan; season with salt and pepper, to taste. Gently toss to combine.
- Place into oven and bake for 25-30 minutes, or until golden brown and crisp. Stir in butter until melted, about 1 minute.
- Serve immediately, garnished with parsley, if desired.
