Garlic Roasted Shrimp with Spinach Artichoke Pasta

Garlic Roasted Shrimp with Spinach Artichoke Pasta comes together in just 15 minutes. It's a great way to have the ever popular dip for dinner too!

Ingredients

Garlic Roasted Shrimp

  • 1 lb. of shrimp peeled and deveined
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp garlic powder

Spinach Artichoke Pasta

  • 12 oz. of Farfalle pasta
  • 1 tbsp olive oil
  • 1 onion chopped
  • 2 cloves of garlic minced
  • 8.5 oz. can of artichokes hearts chopped
  • 8 cups baby spinach
  • 1 tsp salt
  • ½ tsp pepper
  • 1 cup shredded Parmesan cheese

Instructions

Roasted Garlic Shrimp

  1. preheat oven to 400 degrees
  2. line a baking sheet with foil
  3. toss shrimp, olive oil, salt, pepper and garlic powder together
  4. spread shrimp out in an even layer and place in the oven
  5. roast for 8-10 min or until shrimp are cooked through
  6. remove to a plate to wait for pasta

Spinach Artichoke Pasta

  1. cook pasta according to directions on package
  2. in a large skillet heat olive oil over med heat
  3. add onions and cook for 2-3 minutes or until translucent
  4. stir in garlic and cook for 1-2 min
  5. add in artichokes and spinach (this may seem like a lot but it cooks WAY down)
  6. season with salt and pepper
  7. once the spinach has cooked down, stir in the Parmesan cheese
  8. add pasta to a large serving bowl
  9. add spinach mixture to the pasta and toss
  10. place the shrimp on top and serve
