Gazpacho

Served very cold and traditionally prepared in a mortar, gazpacho typically includes tomatoes, bell peppers, cucumbers, garlic and stale bread.

Ingredients

Servings
  • 6 tomato peeled and seeded
  • 2 bell pepper seeded, red
  • 2 cloves garlic
  • 1 red onion
  • 1 cucumber
  • 3 tablespoons sherry vinegar
  • 4 tablespoons olive oil
  • 2 lices bread
  • 1 cup water
  • fleur de sel
  • black pepper

Instructions

  1. Coarsely chop tomatoes and cucumbers.
  2. Peel the garlic and onion and coarsely chop.
  3. Finely dice a quarter of the vegetables, and refrigerate.
  4. In a blender, mix the remaining vegetables (tomatoes, bell peppers, cucumbers, garlic, red onion and scallion) and cilantro.
  5. Stir in olive oil, water, sherry vinegar, and fleur de sel, and blend until reaching a smooth consistency.
  6. Chill for about 2 hours.
  7. At time of serving, add salt, black pepper and basil.
  8. Place the reserved diced vegetables on top of the gazpacho.
