Genmaicha, literally "brown rice tea", is a Japanese green tea mixed with roasted rice grains, very popular in Japan.

Ingredients
- 8 oz. Japanese short-grain white rice
- Loose leaf japanese green tea
Equipment
- baking sheet
- parchment paper
- Glass container
- Tea ball
Instructions
- Pour the rice into a bowl and cover generously with lukewarm water at 97 F (36°C).
- Let it soak for 30 minutes, drain it and cook it by absorption according to the instructions on its packaging, either in a rice cooker or in a Dutch oven.
- Spread the steamed rice grains in a thin layer on a baking sheet lined with parchment paper and let them cool completely.
- Heat a nonstick skillet over medium heat.
- Add the cooled rice in batches to allow it to brown evenly and grill until browned and puffed.
- Once the rice has completely cooled, weigh it and mix it with an equal amount of loose green tea leaves.
- Store it in a glass container with an airtight seal.
- To enjoy a drink, place 1 or 2 tablespoons of genmaicha in a tea ball or teapot fitted with a strainer and let steep for 2 minutes.
- Decant the tea into a preheated teacup to serve.
