  • 20 g butter
  • 1 onion
  • 200 g cream cheese full fat
  • 1 l vegetable fond or stock
  • 100-200 g grated horseradish or Horseradish Cream, fresh or from a jar
  • 100 g bacon slices for serving
  • Worcestersauce
  • sugar
  • salt
  • pepper
  • lemon juice optional
  • parsley for garnish, optional

Instructions

  1. Chop the onion very finely.
  2. In the medium pot melt the butter.
  3. Add onion and fry it until translucent.
  4. Add cream cheese and horseradish. Add only half the recommended amount of horseradish if you don't like spicy. You can add some more later.
  5. As soon as the cream cheese melts, add vegetable fond or stock. Please bring it to a boil, turn the heat to medium-low and let it cook for 10 minutes. It would be best if you stirred the soup from time to time.
  6. Cut the bacon slices into smaller chunks. Preheat a large pan without oil and fry the slices until crispy.
  7. After 10 minutes, season the soup with salt, pepper, Worcester sauce, sugar, and lemon juice according to your taste. Add more horseradish if you feel the soup needs to be more kick.
  8. Garnish the soup with bacon cubes and parsley.
  9. Serve immediately.
