German Celeriac Soup

German Celery Root Soup is a perfect starter for any fine-dining experience. The soup is mild, creamy and ready in no-time!

Ingredients

  • 600 g celery root
  • 250 g potatoes
  • 1 apple
  • 1 onion
  • 20 g butter
  • 1 l vegetable fond or stock
  • 1 garlic clove
  • 200 ml cream
  • salt
  • pepper
  • nutmeg
  • 2-3 tbsp white vinegar or apple vinegar
  • 2 tbsp chopped parsley

Instructions

Prepare the ingredients

  1. Peel and cut the onion, celery root and potatoes roughly.
  2. Peel and cut the apple into quarters and core it.
  3. Take a large pot and melt the butter in it.
  4. Add chopped onion and fry until translucent.
  5. Add celery root, potatoes and apple. Fry it for 3 minutes, turning from time to time.
  6. Add the vegetable stock or fond.
  7. Peel and press the garlic.
  8. Bring it to a boil, cover with the lid and simmer for 20 minutes (or until the vegetables are soft).
  9. Blend the soup until smooth.
  10. Season the soup with salt, pepper, nutmeg, and white or apple vinegar.
  11. Add cream, bring it to a boil and stir well.
  12. Correct the seasoning.
  13. Garnish with parsley before serving.
