German Mascarpone Dessert with Grapes

Ingredients
- 1 lb (500g) grapes any kind
- 8 oz (225g) Chocolate Chip Cookies (should be crunchy not chewy)
- 8.8 oz (250g) mascarpone cheese
- 8.8 oz (250g) quark
- ⅓ cup (80g) sugar
- 1 cup (240g) heavy whipping cream
- 1½ tsp vanilla sugar (or use 1 tbsp powdered sugar and 1 tsp vanilla extract)

Instructions
- Wash the grapes, remove them from stems, and let them dry. Set aside.
- Using a zip lock bag (or any other method), crush the chocolate chip cookies into small crumbs. Set aside.
- In a medium sized bowl, combine mascarpone cheese, quark and sugar. Beat with an electric hand mixer until the sugar is well-incorporated (about 3-5 minutes). Set aside.
- In a separate bowl, beat the heavy whipping cream and vanilla sugar until done (about 5 minutes). You can also use 1 tbsp powdered sugar and 1 tsp vanilla extract instead of the vanilla sugar.
- Once the whipped cream is done, transfer the mascarpone and quark mixture into the whipped cream. Beat for another minute until everything is well combined.
- To serve, layer the grapes, cream and cookies in a glass until full. Or serve in one big bowl by layering the grapes and the cookie crumbs on the top of the cream and ladle into dessert bowls with a big serving spoon.
Notes
- - This recipe can be made 1 day in advance, but the cream, grapes and crushed cookies should be stored separately. Combine shortly before serving.
- - Leftovers can be kept in the fridge for up to 2 days.
