German Pancakes
Description
The German Pancakes recipe combines room temperature eggs, flour, milk, sugar, and vanilla into a smooth batter which is baked at a high temperature in an oven-safe skillet with melted butter. The melting butter in the skillet adds richness and aids in browning during the baking process. Baking for 15 to 20 minutes allows the pancake to puff significantly and develop golden, crisp edges while the inside remains soft and light.
This pancake's texture contrasts crispy edges with a tender interior, lending itself well to paired toppings, which can vary according to preference. Its puffed shape and light sweetness make it suitable for breakfast or brunch.
To ensure the best rise, use room temperature eggs and milk, as cold ingredients can inhibit proper puffing. Salted butter is used for flavor; if unsalted butter is preferred, adding a pinch of salt to the batter can compensate. The recipe provides flexibility with milk types from skim to whole milk, depending on the desired richness.
Ingredients
- 3 egg at room temperature, large
- 1/2 cup all-purpose flour
- 1/2 cup milk at room temperature
- 1 tablespoon granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 cup butter
- toppings
Instructions
- Heat oven to 425 F. Lower the oven racks to the lowest position.
- Combine eggs, flour, milk, sugar, and vanilla in a blender or food processor.
- Blend until smooth and well-combined. If you prefer, whisk the ingredients together in a large bowl by hand.
- Add the butter to an oven-safe 10-inch skillet, like a cast iron skillet.
- Put the skillet in the oven to let the butter melt. Keep a close eye on the butter.
- Once the butter has melted, remove the skillet from the oven.
- Pour in the batter, and return the skillet to the oven.
- Bake for 15-20 minutes, or until the pancake is puffed and golden brown.
- Remove the pancake from the oven.
- Cut into wedges and serve with desired toppings.
Notes
- Use eggs and milk at room temperature to maximize the pancake's rise and puffiness.
- If using unsalted butter, add a small pinch of salt to the batter to balance the flavor.
- You may choose any type of milk from skim to whole based on preference without affecting the recipe outcome much.
- Serve the German Pancake warm immediately after baking for best texture and taste.
