  • 8 ounces Bacon ,diced
  • 1 onion chopped, large
  • 1 garlic minced, clove
  • 2 pounds waxy potato ,chopped into 1/4 inch pieces
  • 1 leek sliced and thoroughly washed, large
  • 3 carrot diced
  • 1 1/2 cups celeriac aka celery root, diced
  • 2 tomato diced
  • 6 cups chicken broth quality
  • 1/2 teaspoon thyme dried
  • 1/2 teaspoon rosemary dried
  • 1/2 teaspoon marjoram dried
  • 3/4 teaspoon salt sea salt
  • 1/2 teaspoon black pepper freshly ground
  • 1 bay leaf
  • 1/4 cup parsley chopped, fresh

Instructions

  1. Fry the bacon then add the onion and cook until golden, 6-8 minutes.  Add the garlic and cook for another minute.  Add all remaining ingredients except for the parsley.  Bring to a boil, reduce the heat to medium-low, cover and simmer 30-40 minutes.
  2. Add the parsley and simmer for another minute.  Add salt and pepper to taste.
  3. Note: This is a great make-ahead soup as the flavor is even better the next day!
