Ingredients
- 2 ¼ cups all-purpose flour
- 2 teaspoons ground ginger
- 1 ½ teaspoons ground cinnamon
- ½ teaspoon ground nutmeg
- ½ teaspoon ground cloves
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup unsalted butter softened
- ½ cup brown sugar packed
- ⅓ cup molasses
- 1 egg
- 1 teaspoon vanilla extract
- ¼ cup milk
- ½ cup granulated sugar for rolling
- ½ cup powdered sugar for rolling
Instructions
Step No.1: Mix Dry Ingredients
- In a medium bowl, whisk together flour, ginger, cinnamon, nutmeg, cloves, baking soda, and salt.
Step No.2: Cream Butter & Sugar
- In a large mixing bowl, beat butter and brown sugar until light and fluffy. Add molasses, egg, and vanilla, mixing until smooth.
Step No.3: Combine Wet & Dry Ingredients
- Gradually mix in the dry ingredients, alternating with milk, until a soft dough forms.
Step No.4: Chill the Dough
- Cover and refrigerate for at least 1 hour to firm up.
Step No.5: Preheat Oven & Prep Baking Sheet
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
Step No.6: Shape & Coat Cookies
- Roll dough into 1-inch balls. Roll each ball first in granulated sugar, then in powdered sugar.
Step No.7: Bake Until Set
- Place cookies on the baking sheet, spacing them apart. Bake for 12-15 minutes, or until they puff up and crack.
Step No.8: Cool & Enjoy
- Let cookies cool for a few minutes before transferring them to a wire rack.
Notes
- Chilling the dough is essential for the best crinkle effect.
- For extra spice, add a pinch of black pepper for warmth.
- Use dark or light molasses depending on how rich you want the flavor.
- If cookies spread too much, chill the dough longer.
- Chewy Gingerbread: Substitute half the butter with applesauce.
- Chocolate Gingerbread: Add ½ cup mini chocolate chips.
- Spiced Sugar Coating: Mix cinnamon with powdered sugar before rolling.
- Maple Glaze: Drizzle cookies with a maple icing for extra sweetness.
- Crispy Edges: Bake for an extra 2-3 minutes.
- Dairy-Free: Use dairy-free butter and milk alternatives.
