Ingredients
Cinnamon Apple Cake:
- ½ cup vegetable oil
- ½ cup sour cream
- 2 large eggs
- 1 tsp vanilla extract
- 1½ cups flour
- ¾ cup white sugar
- 2 tsp baking powder
- 1 tsp cinnamon
- ½ tsp baking soda
- pinch of salt
- 1 cup red apple, peeled and diced *1 large or 2 small
Cinnamon Topping:
- ¼ cup white sugar
- 1 tbsp melted unsalted butter, cooled
- 1 tsp cinnamon
Glaze:
- ¼ cup powdered sugar
- 2-3 tsp milk, to taste, depending on desired thickness
Instructions
- Preheat the oven to 350 degrees. Coat a 9-inch round cake pan with cooking spray.
- Make the cake by combining the oil, sour cream, eggs, and vanilla in a small bowl; whisk until combined.
- In a separate bowl, combine the flour, sugar, baking powder, cinnamon, baking soda, and salt together until well combined. Add the apples and mix until evenly coated.
- Gradually add the wet ingredients to the dry ingredients until just combined. Pour batter into the prepared cake tin and spread out evenly with a rubber spatula. The batter will be very thick.
- Make the cinnamon topping by combining the cooled melted butter with the sugar and cinnamon until well combined. Sprinkle evenly over the top of the cake.
- Bake the cake for 30-35 minutes, making sure to turn halfway through baking, until a tester inserted in the center comes out clean. Transfer to a wire rack to cool.
- Make the glaze by combining the powdered sugar and milk together until creamy, smooth, and your desired thickness.
- Drizzle the glaze over the cooled cake. Slice and serve with ice-cold milk. Enjoy!
