Ingredients

  • 1 onion chopped, large
  • 2 tablespoons canola oil
  • 2 cloves garlic minced
  • 1 tablespoon oregano dried
  • 3/4 teaspoon salt
  • 3/4 teaspoon black pepper
  • 2 flank steak 1 1/4 lb, cut in half
  • 1 cup beef broth low-sodium
  • cayenne pepper optional, dash

Instructions

  1. Place onion in a 5 - 7 quart slow cooker.
  2. Stir together oil, garlic, oregano, salt, pepper and cayenne pepper (optional).
  3. Rub mixture over steaks and place on onions in the slow cooker.
  4. Add broth, cover and cook on low 8 hours.
  5. Cut steak across the grain into thin slices (reserve half steak for another meal)
  6. Serve remaining steak with onions and gravy from slow cooker.

Notes

  • To thicken the cooking broth, simmer 1 cup of the broth with 1 tablespoon arrowroot, cornstarch, or flour over medium heat until slightly thickened.
