Greek Fries

These Greek Fries are crispy and packed with flavor! They are the perfect appetizer topped with feta and dill. Don't forget the feta dip!

Ingredients

  • 4 large russet potatoes
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon dried parsley
  • 1 teaspoon oregano
  • 1 teaspoon dried dill
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon lemon pepper
  • 4 ounces feta cheese crumbled
  • fresh dill for garnish

Feta Dip

  • 1/2 cup plain greek yogurt
  • 2 ounces feta cheese
  • 1 tablespoon mayonnaise
  • Juice of half a lemon
  • 1/4 teaspoon salt
  • pepper to taste
  • 1 tablespoon fresh dill
  • 1 tablespoon fresh parsley

Instructions

  1. Wash the potatoes and cut them into your desired fry shape. Soak in cold water for at least 30 minutes.
  2. Drain the fries and pat them dry. Add the fries to a bowl and toss in oil and spices.
  3. Place the potatoes in a single layer on a baking sheet. Try to spread them out so that they are not touching.
  4. Bake at 375 for 20 minutes. Flip the fries then turn the oven up to 425 and bake for 20-25 more minutes. If you want extra crispiness, broil for a few minutes until the fries are golden brown and crisp to your liking.
  5. Place fries on a plate or platter and top with feta cheese and fresh dill.

Feta Dip

  1. Place all ingredients in a blender or food processor. Blend until smooth.
  2. Serve with Greek fries.

Notes

  • Greek Fries also taste great dipped in tzatziki sauce or garlic aioli.
  • I like to use the feta that comes in a block instead of crumbles. The feta from a block is creamier. 
  • To make things easier you can use frozen french fries. Cook the fries halfway, according to package directions and then toss with spices. Finish cooking according to package directions.
