These Greek Fries are crispy and packed with flavor! They are the perfect appetizer topped with feta and dill. Don't forget the feta dip!

Ingredients
- 4 large russet potatoes
- 3 tablespoons olive oil
- 1 teaspoon salt
- 1 teaspoon dried parsley
- 1 teaspoon oregano
- 1 teaspoon dried dill
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon lemon pepper
- 4 ounces feta cheese crumbled
- fresh dill for garnish
Feta Dip
- 1/2 cup plain greek yogurt
- 2 ounces feta cheese
- 1 tablespoon mayonnaise
- Juice of half a lemon
- 1/4 teaspoon salt
- pepper to taste
- 1 tablespoon fresh dill
- 1 tablespoon fresh parsley

Instructions
- Wash the potatoes and cut them into your desired fry shape. Soak in cold water for at least 30 minutes.
- Drain the fries and pat them dry. Add the fries to a bowl and toss in oil and spices.
- Place the potatoes in a single layer on a baking sheet. Try to spread them out so that they are not touching.
- Bake at 375 for 20 minutes. Flip the fries then turn the oven up to 425 and bake for 20-25 more minutes. If you want extra crispiness, broil for a few minutes until the fries are golden brown and crisp to your liking.
- Place fries on a plate or platter and top with feta cheese and fresh dill.
Feta Dip
- Place all ingredients in a blender or food processor. Blend until smooth.
- Serve with Greek fries.
Notes
- Greek Fries also taste great dipped in tzatziki sauce or garlic aioli.
- I like to use the feta that comes in a block instead of crumbles. The feta from a block is creamier.
- To make things easier you can use frozen french fries. Cook the fries halfway, according to package directions and then toss with spices. Finish cooking according to package directions.
