Ingredients

For the onion topping

  • 2 large onions cut into 1/4-inch thick slices
  • 1/4 cup all-purpose flour
  • 1/2 cup panko breadcrumbs
  • 1 teaspoon salt
  • cooking spray

For the casserole

  • 2 tablespoons butter
  • ½ cup onion diced
  • 2 cloves garlic minced
  • 8 ounces mushrooms sliced
  • 1 teaspoon dried thyme
  • salt & pepper
  • 4 cups frozen green beans 20oz
  • ¼ cup flour
  • 1 cup chicken stock
  • 1 cup half-and-half

Instructions

For the onion topping

  1. Preheat oven to 450 degrees F.
  2. Grease a baking sheet with cooking spray.
  3. Cut onions into 1/4-inch thick slices.
  4. In a large bowl, add the flour, panko breadcrumbs, and salt.
  5. Add the onion to a large mixing bowl and mix to evenly coat the onions.
  6. Turn out onions (and any excess flour/breadcrumbs mixture) onto the prepared baking sheet and separate as best you can.
  7. Generously spray the onions with olive oil cooking spray, or drizzle with olive oil.
  8. Bake for 20 minutes, or until golden brown, stirring every 4-5 minutes.
  9. Remove from oven and let stand 2 to 3 minutes, or until ready to use.

For the casserole:

  1. Preheat oven to 375 degrees F.
  2. Melt butter in a large skillet over medium-high heat.
  3. Add onions and cook for 4 minutes, or until softened.
  4. Stir in garlic and continue to cook for 1 minute.
  5. Add mushrooms and season with thyme, salt and pepper.
  6. Cook until the mushrooms soften.
  7. Sprinkle the flour over the top and stir until combined.
  8. Stir in the chicken stock and bring to a simmer.
  9. Reduce the heat to medium and add the half-and-half.
  10. Cook, stirring until the mixture has thickened.
  11. Remove from the heat and add the green beans. Mix well to combine.
  12. Place skillet (if oven proof) in the oven or pour the mixture into a baking dish and top with the fried onions (along with the crumbs) and bake for 15 minutes, or until bubbling.
  13. Remove from oven and allow to cool (about 5 mins).
