Green Beans Almondine

A classic French dish turned into a Thanksgiving staple; green beans almondine is a mainstay of holiday dishes. Every home cook needs to have this recipe in their back pocket for big family meals.

Ingredients

  • 3 Tablespoons salt (for water)
  • 1 lb green beans (Trimmed- Use smaller French haricot vert green beans if you can find them)
  • 3 Tablespoons butter (divided)
  • 1/3 Cup almonds (sliced)
  • 1/4 Cup yellow onion (finely diced)
  • 2 Tablespoons garlic (finely minced)
  • 2 teaspoons lemon juice
  • salt (to taste)
  • black pepper (to taste)

Instructions

  1. Bring a large pot of water to a boil. Add the salt.
  2. Lightly boil the green beans for 4 to 5 minutes, stirring occasionally, or until they are crisp-tender and slightly under cooked. Drain and set aside.
  3. Melt 2 Tablespoons butter in a large skillet over medium low heat. Add the sliced almonds and stir for 2-3 minutes just until they start to turn a light brown. Remove them from the pan and set aside.
  4. Turn the heat down to low and add 1 tablespoon butter, yellow onion and garlic. Saute for 1-2 minutes until it is lightly caramelized.
  5. Add the green beans and 1 tablespoon of water to the skillet and saute until the green beans are tender and well combined.
  6. Add the almonds in (Reserve about 2-3 tablespoons for topping), lemon zest and lemon juice, toss gently to combine. Add salt and pepper to taste.
  7. Top with the reserved almonds and some fresh parsley and serve.

Notes

  • For an extra flavor boost add 1 cup sliced mushrooms: Saute mushrooms along with the onions before you add in the green beans!
