For the bacon vinaigrette

  • 1 tbsp olive oil
  • 1 red onion finely chopped
  • 4 garlic cloves thinly sliced
  • 10 trips Bacon chopped
  • 2 tbsp red wine vinegar
  • 1-2 tsp honey
  • 1 tbsp chopped chives
  • 1 tbsp chopped parsley
  • salt and pepper to taste

For the broccoli

  • 2 heads broccoli
  • 2 tsp oil

Instructions

  1. In a pan set over medium-high heat, cook the onion in the oil until soft and translucent.
  2. Add the garlic and bacon and cook until the bacon is crisp and the fat is rendered out.
  3. Depending on the amount of fat in the pan, you might need to remove a few tablespoons.
  4. Pour the red wine vinegar and honey into the pan and stir to combine. Add the parsley and chives and set aside.
  5. Slice the heads of broccoli into 2cm thick sliced. Drizzle a few teaspoons of olive oil over the broccoli and season with salt and pepper.
  6. Grill the broccoli over high heat until caramelized and golden on both sides. The broccoli should be firm but not hard.
  7. Pour the vinaigrette over the broccoli while warm and serve.
