Ingredients

  • 1 tbsp olive oil
  • Juice & zest of one lemon
  • 1 tbsp shallot finely diced **If the shallot is too strongly flavored, dice it and soak it in ice water for 10 minutes
  • 1 clove of garlic minced
  • Sea Salt and Freshly Cracked Pepper to taste
  • 1 bunch of asparagus wooden ends trimmed
  • Parmesan Cheese shredded

Instructions

  1. Combine the olive oil, lemon zest, lemon juice, shallot, garlic, sea salt, and freshly cracked pepper with a whisk until well combined. Set aside to let the flavors mingle. Side Note: If your shallot's flavor is too strong, soak in cold water for a few minutes before making the vinaigrette.
  2. Heat a grill pan over medium heat and coat it with cooking spray. Place the asparagus on the grill pan and season with sea salt and freshly cracked pepper, to taste.
  3. Cook the asparagus for 3-4 minutes then flip and cook for another 2-3 minutes or until tender.
  4. Toss the asparagus with some of the lemon vinaigrette then place onto a serving platter and sprinkle it with Parmesan cheese.
  5. Serve the asparagus with the remaining sauce on the side. Enjoy.
