Grilled Chicken Salad

Grilled Chicken Salad:

  • 2 chicken breasts , boneless and skinless
  • 6 cups romaine lettuce , coarsely chopped
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 tablespoons olive oil
  • 8 lices Bacon , cooked and chopped
  • 2 medium tomatoes , cored and chopped
  • 1 cup blue cheese , crumbled
  • 1 avocado , peeled, pitted, and diced
  • 1 cucumber , peeled and chopped

Balsamic Vinaigrette Dressing:

  • 1/2 cup olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1/4 teaspoon garlic powder

Instructions

Grilled Chicken Salad:

  1. Butterfly the chicken into 4 thin fillets.
  2. Season with salt and pepper.
  3. Add olive oil to a large deep skillet on medium-high heat.
  4. Cook on each side for 6-8 minutes until well browned, then remove from the pan.
  5. Slice into 1/2" thick strips.
  6. Add the lettuce, chicken, bacon pieces, tomatoes, blue cheese, avocado, and cucumber.

Balsamic Vinaigrette Dressing:

  1. Add olive oil, balsamic vinegar, honey, dijon mustard, kosher salt, black pepper and oregano to a bowl.
  2. Whisk well until combined and serve immediately.
  3. Alternately add to a glass jar and shake to combine.
  4. Shake or whisk right before using.
