Ingredients
Grilled Chicken Salad:
- 2 chicken breasts , boneless and skinless
- 6 cups romaine lettuce , coarsely chopped
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 2 tablespoons olive oil
- 8 lices Bacon , cooked and chopped
- 2 medium tomatoes , cored and chopped
- 1 cup blue cheese , crumbled
- 1 avocado , peeled, pitted, and diced
- 1 cucumber , peeled and chopped
Balsamic Vinaigrette Dressing:
- 1/2 cup olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- 1/4 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 1/4 teaspoon garlic powder
Instructions
Grilled Chicken Salad:
- Butterfly the chicken into 4 thin fillets.
- Season with salt and pepper.
- Add olive oil to a large deep skillet on medium-high heat.
- Cook on each side for 6-8 minutes until well browned, then remove from the pan.
- Slice into 1/2" thick strips.
- Add the lettuce, chicken, bacon pieces, tomatoes, blue cheese, avocado, and cucumber.
Balsamic Vinaigrette Dressing:
- Add olive oil, balsamic vinegar, honey, dijon mustard, kosher salt, black pepper and oregano to a bowl.
- Whisk well until combined and serve immediately.
- Alternately add to a glass jar and shake to combine.
- Shake or whisk right before using.
